Are you afraid of buttercream? Have no fear, America's Test Kitchen is here! I love the books from the Ilustrated series and as a baker, this one is especially close to my heart. Find out the hows and whys for your dessert and baking favorites. Perfect for beginners and old hands.

This is a great book - I found that it gave explanations as to why things happened so that I could transfer that knowledge to other areas of my baking. As a result of this book, my bread is amazing!!!!

The ultimate book for home bakers! Cook''s Illustrated tests recipes over and over and over and over so that you don''t have to, tweaking ingredients and proportions to develop the best recipe for everything under the sun. This book is a compilation of their tested recipes for baked goods -- sweet and savoury -- all of which include the stories of *how* the test kitchens tweaked the recipes and *why* the recipes they develop work so well. The pastry cream recipe is an absolute knockout!
